I am an instructional designer and using the adobe suite is common place, illustrator makes it easy to create animations and then bring them to life using video through aftereffects, it's a great piece of software.
LIke all adobe products it has a very steep learning curve and in my opinion the interface isn't the most user friendly, I don't know what the logic behind it was but that's my biggest quip here.
as an instructional designer my biggest issue is being able to use real life or animated creations, this makes it easy for me to create unique content for my learners.

This is a very good software for editing photos, I have worked on it for 7 years, it is very easy software.Also this software can be used for technical writing Purpose.
There is only one drawback in this software that only one page is opened at a time specially when you are working for number of page in PDF. Because in Other software this facility are available.

Creating vector icons and vector images
For my research project, helps me with extracting the high resolution images which are the key part of the project. I am highly recommending Illustrator for the imaging projects

For me, being able to scale up or scale down and not lose quality was important. Illustrator, obviously being vector-based, solves for that. As with all Adobe products, they are setup with the relatively same layout, and that felt familiar.
The biggest dislike is just the learning curve. I grew up primarily using Photoshop. While there were similar elements to Illustrator, it really is a much different tool. But once you get over the learning curve, it will be fine.
Illustrator allows for me to create scalable mockups and designs. They can be super simple, or more complex. I feel that the more I use it, the more familiar I get with it and knowing that I could take a deeper dive into the more complex features is nice to know.

I like this illustrator and prefer it over the others tool for graphic design. No problem with the use of it.
