I feel the templates provided by default are excellent. But I do thunk the number of options are rather limited. I would appreciate more robust and complex yet interactive examples as well, so new users can truly understand the potential of shopify.

We're currently using Shopify for three stores. Before Shopify we used GoDaddy and Magento. Shopify is easily the best platform we've ever used. Stores are easy to manage and maintain. Shopify has everything we need to run an e-commerce store including shipping labels, multiple payment options, a blog, a massive app store for additional features, and so much more.
Adding functionality to your store is easy with the app store but it can get pricey. With some popular apps going for $20-30 a month, you can easily double or triple your monthly Shopify subscription fee just in apps.
Shopify is an all-in-one ecommerce solution. Shopify provides an SSL certificate, merchant account, and shipping labels without an additional monthly fee. Before with other platforms, all of those things were separate.
